I have done only one big one to date but it was nerve wracking. (I cried during the process of decorating it) But, I too love the challenge and will do it again I am sure. The cake flavor was very simple – as per the request of the bride and groom. White cake with Vanilla Italian meringue buttercream.
I am so fortunate to work in a gorgeous kitchen and when they were designing the kitchen they created an entire area just for me. I also have a very large (60 qt.) stand mixer. I am quite spoiled!

I feel the same way you do about wedding cakes (maybe it’s my European background but flavor comes first). But this is amazing! What was the filling? And one more thing, where do you store all the layers when you make them? In the new kitchen? That’s the problem I have when people ask me to create large cakes for them. Lack of mixer space, lack of refrigerator space… Anyhow, I was happy to see a new post from you! Lovely!
