Intro

I have a love/ hate relationship with wedding cakes. I think it is quite silly to try to create a delicious, moist cake that is vertical and structurally sound. At the same time I absolutely love the challenge.

I always tell my clients that taste comes first. I will never serve a dry piece of cake so sometimes I have to sacrifice the design to accommodate that. Now this also might be that I only have two years of wedding cake experience and have not had the opportunities to learn all the tricks to creating a delicious cake that is also visually stunning. However with the little experience I do have (all self-taught) I think I have managed to create some rather lovely and always delicious wedding cakes – if I do say so myself – which I hate doing. ๐Ÿ™‚

Having said all that here are a couple images of a wedding cake that I created for a very close family friend of ours. The bride’s sister and I used to grow up playing “shop” pretending what we would be when we grew up. So it was quite momentous for me to be “grown -up” and creating this cake for her sister. I love what I do and still often feel as if I am playing a game. What a wonderful thing it is to love your career and to find it so fulfilling.

    Ashley- This looks beautiful! I feel the same way you do about wedding cakes (maybe it’s my European background but flavor comes first). But this is amazing! What was the filling? And one more thing, where do you store all the layers when you make them? In the new kitchen? That’s the problem I have when people ask me to create large cakes for them. Lack of mixer space, lack of refrigerator space… Anyhow, I was happy to see a new post from you! Lovely!

    I am glad I am not alone in my thinking. The cake flavor was very simple – as per the request of the bride and groom. White cake with Vanilla Italian meringue buttercream.
    I am so fortunate to work in a gorgeous kitchen and when they were designing the kitchen they created an entire area just for me. I also have a very large (60 qt.) stand mixer. I am quite spoiled!

    I am a cake and dessert person myself and I feel your trepidation when it comes to wedding cakes. I have done only one big one to date but it was nerve wracking. (I cried during the process of decorating it) But, I too love the challenge and will do it again I am sure. Your cake is gorgeous, as is everything else on your blog. I have been watching for a while and I truly enjoy it. Thank you for the inspiration ๐Ÿ™‚
