Do you have the recipe posted somewhere for the lemon vinaigrette with capers you’d mentioned in the post you served with it when you made it for your birthday dinner? I’d love to try it, it sounds amazing (as does this version 🙂

WOW That looks amazing!! It could easily be a great vegetarian meal in itself. Love feta, but I know of another cheese that might give it a zip, it’s called Provolone Picante, an aged provo. Love your blog! Keeps me on my toes.

I made your wonderful baked cauliflower last night for the first time & what a revelation – it was so delicious! I served it with an optional Japanese dressing of soy sauce, sesame, rice vinegar, lime, ginger, chilli & garlic. The whole lot was snaffled up so quickly I barely got a look in!

I used the leaves this morning in my green juice & guess what….that was delicious too!

Congrats on Saveur ! What an honor. As for the cauliflower – my wife absolutely loves cauliflower – and I never would have thought to roast it whole. I think I am going to make this, chill it and bring it on our Mother’s Day picnic. Carve it up on the blanket, mangia ! Thank you much.

Lovely recipe idea. I roasted the cauliflower, then chopped it up and tossed it with the tomato vinaigrette, some feta crumbles and mint, then used it as filling for giant, delicious ravioli. Thanks for the inspiration!

Congratulations on your nomination and good luck! Cauliflower is my new go to veggie. I even make “cauliflower fried rice”… Delish. If you put florets in food processor and pulse, florets will resemble rice. Sauté your favorite veggies or whatevers in the fridge and add the cauliflower rice, soy sauce and scrambled egg if you desire…..yummmm!

Cauliflower is not an easy vegetable to love, especially if poorly prepared memories tend to haunt, but once you give it a chance it’s beyond addictive. Love the look of the whole charred head!

Thanks for this recipe! I made it tonight for dinner here in Belgium. I was intrigued by two things: roasting the whole head, and the mint. The latter added just the right contrast to the very savory/salty pesto and feta. I served it with barley instead of risotto, but the overall effect was delicious (and looked great on the serving platter). And my husband loved it.
