Friberg is the man! I just had to add that ‘Cookwise’ and ‘Bakewise’ by Shirley O’Corriher are both books that have been given bible status in my house 😛 amazing reference books!

I’ve been struggling with this same dilemma–to go to culinary school or not to go. Thank you for sharing your wisdom and for reminding me that becoming a great cook does not just happen over night. I just ordered “Ratio” and can’t wait to put it into practice–thanks for the inspiration!
