Incredible to find someone else who makes Meringue Mushrooms. I’ve been making my own mushrooms like this for about 10 years now. I have a slightly different technique for joining the two halves that I thought I would share. When the caps come out of the oven, I take flip them all over, then using a pointy knife I put the tip in the centre of the bottom, then rotate the cap to make a hole. I put my melted chocolate into my piping bag and I fill 15-20 caps with a dollop of chocolate, then I put a stem in each and flip it over to stand it up. They dont’ get the brown undercoating yours have, but they are oooohed and aaaaahhhhed at by everyone that see and eats them!
