When we had Cinco de Mayo for 25 people (in France, so no good tortillas available, just really industrial things), I spent 10 hours on May 4 making tortillas. I was exhausted. And I overdid it. So we had leftovers, which I took the time to fry into puffy taco shells (happy family). There are exactly two downsides to living in France: (1) family is too far away and (2) no tortillerias.
I am interested by your grilled avocados. I tried the popular avocado rice recipe, and found that warm avocado didn’t suit me. Grilled? Will it be the same or different? We will have to find out!
Re charred scallions: check out calçots–a specialty of the micro-nation of Andorra. Yummy!
