This looks freaking fantastic!!! I love roasted garlic on toast but I’ve never tried it braised (is that right?) like this. I can’t wait to try it! THIS sounds amazing. I love the use of the La Brea bread. I always use theirs for garlic bread because the inside is soft and fluffy enough. Love this recipe and can’t wait to try it.

Thank you for specifying the amount of lemon zest not based on some portion of the lemon. Could you give an approximate weight for the Parmesan? Is the Parmesan grated with a microplane or a coarser grater?

I often put a head of garlic in the oven along with other things (dinner, not bakery!). It cooks slowly, and the confit cloves are so delicious when spread on bread.
This takes it to another level. The cheese and the lemon zest are brilliant. Parmesan is a little salty, so you not only have that rich cheese taste but a little saltiness, too.
