I love pudding and coffee. Never thought about combining them together. This looks so good. Will surely try it. Thank you for sharing this recipe.

It looks like all the cornstarch clumped–I wonder if any is left in the pudding to thicken it while chilling 🙁 I read up on why, and most tips suggest making a cold cornstarch slurry and slowly whisking that into the simmer over the course of 4-5 minutes. It tastes delicious, but I wonder if I will have a pudding in the end with all that cornstarch strained out. Warning to those others out there unfamiliar with using cornstarch!

This was delicious. Creamy, and lighter than I expected. Not too sweet. I used cold brew coffee extract, which was yummy, but will use espresso next time for a stronger coffee flavor. Overall it was a hit!

I always find myself with left over brewed coffee…and this recipe was perfect to use it up. Loved the flavour and soooo simple to make. This ones a keeper!!!
