CLASS SERIES:

Seasonal Baking Dinner Party Series 2010
$200 for the series (4 Thursday evening classes)  Winter – Thursday February 25th 6:30pm    Spring – May 27th 6:30pm   Summer – August 19th 6:30pm   Fall – October 21st 6:30pm  or purchase individual classes for $60.

This four class series will highlight the season’s finest and showcase my passion for seasonality.  The classes are offered in the unique format of a four-course dinner.  Each course will include demonstration and learning, followed by feasting.  A great alternative to a dinner out!  You’ll eat just as well, all the while learning and interacting in a unique way.  At the end of the class, you’ll have the menu, recipes and techniques to recreate an amazing seasonal dinner party in your own home for your own guests!

INDIVIDUAL CLASSES

Seasonal Series:  Winter
Thursday, February 25th 6:30 – 9:00pm        Cost $60

Join us for the first session of this series as we bake our way through Winter. We’ll start the meal with a crisp unique salad of winter vegetables and aged cheese and bake up walnut truffle artisan bread that will make you forget how cold it is outside. We’ll learn how to make puff pastry and with it, our main course for the evening, an incredible duck meatloaf wrapped in the buttery dough and served with a luscious parsnip puree. After that rich course we’ll cleanse our palette’s by learning a quick and delicious apple and basil granita.  The meal will be finished with an unforgettable dessert inspired by our recent trip to New York.   The class is one part four-course meal, one part baking education and ALL parts wonderful dinner party!   Winter doesn’t get better than that.

Methods learned: no-knead yeasted bread, quick puff pastry, cooking meat en croute (in puff pastry), frozen granita palette cleansers, surprise dessert


Baking for Breakfast (Back by POPULAR demand!)
Friday, March 5th, 10:00 am – 1:00 pm          Cost $50

They say breakfast is the most important meal of the day. Then I say let’s learn how to do it right!

In this course we will learn how to make incredibly tender scones, flaky pastries and fluffy brioche donuts. All this while we munch on praline bacon, fresh fruit and other dishes that will make you wanting breakfast for every meal.

I Heart Butter – Classic and Quick Puff pastry, sweet and savory
Thursday, March 25 6:30 – 9:00pm                 Cost $60

My hope for this class is to make you re-think the idea of buying puff pastry because at the end of this night you will know the techniques behind making the intimidating dough. We will work through both the intensive classic version and the more user-friendly ‘quick’ version, both are rich in butter and better than anything you’ll find in the freezer section.

This class will include a decadent meal consisting of three courses all featuring Puff pastry. You will be filled with delight and butter as you learn the art of making this classic French dough.With our puff we will be making Prosciutto and Gruyère Pinwheels, individual Chicken and Bacon Pot Pies with Winter Root Vegetables, and for dessert, Pear and Pistachio Tartlets.

Class includes three-course dinner, paired drinks, teaching and complete recipes to take home.
