Summer Entertaining: Sips and Snacks

Thursday, July 29 6:30-9:30 $55

Description:
The Sun is out and the patio is ready to party.  This class will get you ready to throw a bash your friends won’t soon forget.  We’ll start with refreshing cocktails -  Mojito granita and Sangria for a crowd.

A wide variety of cooking and baking techniques will be employed as we eat our way through homemade sliders with sesame buns and housemade pickles, potato chips with a salty spicy rub, gougeres, profiteroles and even homemade fortune cookies – the perfect take home party favor for your guests!

Class Menu:
Mojito granita
Sangria for a crowd
Sirloin sliders with homemade sesame buns, pickles and “special sauce” aioli
Homemade potato chips with spice rub
Gruyere gougeres
Chili-salt spiced fresh fruit skewers
Beet hummus & goat cheese on endive
Classic profiteroles with salted caramel ice cream and chocolate sauce
Fortune cookies (you can customize your own messages!)

SUMMER SEASONAL BAKING: PIES AND TARTS
Thursday, August 5th 7:00 – 9:30pm $50


Class Description:
The hot sun of August brings forth some of the sweetest, juiciest berries and fruits known to man, not to mention incredible vegetables!  What better way to highlight this delectable summer produce than with an unmistakably buttery and flaky pastry shell?   In this course, you’ll learn some of my favorite pie and tart shell recipes – including my grandma’s legendary tender crust. We will learn some of the science behind making the crust so you can create the perfect balance of tenderness and flakiness at home. We’ll also do a crust tasting, so you can pick your favorite!  The menu includes both sweet and savory applications.  We will fill these beautiful pie and tart shells the season’s best, using some interesting ingredients (such as zests, spices and herbs) to bring out their natural flavors.

Class Menu:  This menu will expand as the date grows closer and we know what is absolutely best!
Onion tarte tatin
Heirloom tomato tart with goat cheese in a parmesan crust
Fresh fruit tart with cream Baumaniere
Apricot pie
Additional seasonally inspired pie or tart

Classic Pie dough three ways, savory crust, tart dough, pastry cream
