Great question! Absolutely. Classically the herb used is parsley but pretty much anything works. Chives, dill, cilantro – your pick. Oh and tarragon but that is quite strong.

this looks really interesting. sometimes I find Rosemary too much. any suggestions for herby substitutes in the gremolata?
