Because I live in Italy I had ricotta cheese and Marsala on hand so i used all ricotta in the filling instead of the cream cheese and cream. And I used the Marsala in place of the white wine. Didn't have champagne vinegar, so i used some white wine vinegar. Great results and compliments on making one of the more difficult italian pastries. Love the new site! Ciao Ashley,
